The grapes for the Cavedale Vineyard Sonoma Valley Zinfandel were harvested from Julie Belott’s vineyard, located at the foot of Moon Mountain in the beautiful Sonoma Valley. The harvest date was September 26th with a sugar of 26.4 degrees Brix, a TA of .61mg/100ml and a pH of 3.64. The wine was fermented in a small open top tank, hand punched for 5 days, and aged in once used French oak barrels for 18 months. Bottling date was February 18th.
